Ingredients

  • 1 Vanilla bean
  • 375 ml milk
  • 6 egg yolks
  • 130 g sugar
  • 375 ml whipping cream
  • oil (for the mold)
  • 150 g raspberry jam
  • 100 g dark chocolate

Instructions

    Slice the vanilla bean lengthwise and scrape out the seeds. Add the seeds and the pod to the milk and heat. In a saucepan or metal bowl whisk the egg yolks with the sugar until frothy.

    Bring another pot of water to a boil and set the egg‑sugar mixture over it, ensuring it does not touch the water but only hangs in the steam. Slowly pour in the hot vanilla milk, remove the pod, and whisk for about 10 minutes until creamy. Then stir into an ice bath to chill.

    Whip the cream stiffly and fold it into the cold custard.

    Grease a terrine mold lightly with oil and line it with cling film. Pour in the ice cream mixture and smooth the surface. Spoon raspberry jam in dollops along with chopped chocolate on top, then gently fold in with a fork. Fold the film over the mixture and chill for at least 4 hours, preferably overnight, in the freezer.
