Vanilla ice cream with berries

Ingredients
- 0.5 l heavy cream
- 0.25 l milk
- 1 Vanilla bean
- 6 egg yolks
- 200 g sugar
- 800 g strawberries
- 4 tbsp sugar
- 10 tbsp chocolate sauce
- mint

Pour cream and milk into a pot. Split the vanilla bean lengthwise, scrape out the seeds and stir both the seeds and pod into the cream-milk mixture; bring to a boil then set aside.

Beat egg yolks with sugar in a bowl until pale and creamy.

Slowly whisk the hot milk into the yolk mixture, pour back into the pot, remove the vanilla pod, and cook over low heat stirring with a wooden spoon until the custard thickens but does not boil.

Whip the warm custard over ice water to chill it quickly.

Pour the chilled custard into an ice cream maker and churn according to the machine’s instructions. (If no machine, pour into a shallow metal bowl and freeze, stirring vigorously during the first hour to prevent large crystals).

Transfer the frozen mixture into silicone muffin molds and freeze overnight until firm.

The next day wash and dry strawberries, remove stems, quarter them, and mix with sugar. Drizzle 8 tbsp chocolate sauce decoratively on plates, press the ice cream out of the molds onto the plates, drizzle the remaining 2 tbsp sauce over the top, add a few berries per serving, and garnish with mint.
