Vanilla Ice Cream with Berry Salad

Ingredients
- 0.5 l milk
- 0.25 l heavy cream
- 1 Vanilla bean
- 7 egg yolks
- 200 g sugar
- 400 g forest berries
- 60 g black olives (pitted)

Slice the vanilla bean lengthwise, scrape out the seeds and stir them with the vanilla bean into the milk-cream mixture and bring to a boil.

Beat the egg yolks with the sugar in a bowl until creamy.

Pour the boiling milk into the egg yolk mixture, return everything to the pot, remove the vanilla bean and stir over low heat with a wooden spoon until the custard thickens; it must never boil again.

Strain the vanilla custard through a sieve, cool it over ice water while stirring occasionally.

Pour the cold custard into an ice cream maker and churn until ready.

(If no ice cream maker is available, pour into a shallow metal bowl and freeze, stirring repeatedly during the first hour).

To serve, wash, clean and dry the berries. Chop the olives and mix with the berries. Use an ice cream scoop to form balls and arrange them on fresh strawberries with olives.
