Vanilla Ice Cream with Poppy Seeds and Fruits

Ingredients
- 0.5 l milk
- 0.25 l heavy cream
- 1 Vanilla bean
- 7 egg yolks
- 200 g sugar
- 125 g poppy seed mix
- fruits and berries (for garnish, sliced into wedges, some raspberries and blueberries...)

Add cream and milk to a pot. Split the vanilla bean lengthwise, scrape out the seeds, and stir both the seeds and the pod into the cream-milk mixture; bring to a boil.

Beat the egg yolks with sugar in a bowl until creamy.

Pour the boiling milk into the egg yolk mixture, then return everything to the pot. Remove the vanilla pod and cook over low heat, stirring with a wooden spoon until the custard thickens (do not let it boil).

Strain the vanilla custard through a sieve, fold in the poppy seed mix, and cool over ice water while stirring occasionally.

Pour the chilled custard into an ice cream maker, churn until ready, then transfer to a bowl and freeze until serving.

(If no ice cream maker is available, pour into a shallow metal dish and freeze, stirring vigorously during the first hour to prevent large crystals).

When ready to serve, scoop the ice cream onto a plate (briefly placing the bowl in hot water), and garnish with fruits and berries.
