Vanilla Ice Parfait

Ingredients
- 1 Vanilla bean
- 0.5 l milk (3.5% fat)
- 0.25 l heavy cream
- 7 egg yolks
- 120 g raw cane sugar
- 40 g amaretti biscuits
- 12 maraschino cherries

Slice the vanilla bean lengthwise and scrape out the seeds. Combine milk, cream, vanilla seeds and bean in a pot and bring to a boil.

Beat the egg yolks with sugar in a bowl until creamy.

Pour the hot milk mixture in a thin stream into the yolk mixture while stirring. Return everything to the pot, remove the vanilla bean, and stir over low heat with a wooden spoon until the custard thickens; it must not boil to avoid curdling.

Transfer the custard to a metal bowl, cool it over ice water while stirring occasionally. Spoon the custard into four small metal bowls about 5 cm in diameter and freeze for about three hours.

Take the ice parfait out of the freezer about ten minutes before serving. Crush the amaretti biscuits in a freezer bag with a rolling pin. Plate the ice on a dish, sprinkle some crumbs over it, place three cherries on top, and drizzle with cherry liqueur.
