Cinnamon Parfait with Plum Sauce

- 2 egg yolks
- 60 g sugar
- 1 packet vanilla sugar
- 1 tsp ground cinnamon (to taste)
- 200 g whipping cream
- 250 ml red wine
- 200 g plums
- 100 g dried plums
- honey (optional)
- mint (for garnish)

Beat the egg yolks with sugar for about 10 minutes until a white‑creamy mixture forms. Stir in cinnamon, whip the cream to stiff peaks and fold it into the egg mixture. Pour into a small loaf pan lined with cling film, smooth the top. Cover and place in the freezer for at least 4–5 hours.

Pour red wine over the dried plums and let them soak for about an hour, then bring to a boil together. Wash, pit, and add fresh plums. Simmer for 2–3 minutes until soft, then puree. Adjust consistency with more or less wine if needed. Sweeten with honey to taste.

Take the parfait out of the freezer about 20 minutes before serving. Remove from the pan, slice into rounds, and pour the plum sauce over each piece. Serve immediately garnished with mint.
