Simple Strawberry Parfait

Ingredients

  • 700 g strawberries
  • 5 egg yolks
  • 75 g powdered sugar made from raw cane sugar
  • 400 g whipping cream
  • 1 Tbsp fresh mint

Instructions

    Clean, wash, and halve the strawberries; set aside a few for garnish. Place the rest in a blender and pulse briefly so the berries remain chunky.

    Whisk egg yolks and powdered sugar over a hot water bath until thick and creamy. Remove from heat and chill for about 5 minutes. Fold the egg mixture into the fruit puree. Whip the cream to stiff peaks, fold in chopped mint, then combine with the strawberry mixture. Pour into a greased loaf pan and freeze for at least 5 hours.

    Let the parfait thaw for about 10 minutes before serving. Slice, garnish with fresh strawberries, and serve.
