Ingredients

  • 200 g dark chocolate couverture
  • 2 egg yolks
  • 1 whole egg
  • 40 g sugar
  • 20 ml rum
  • 250 ml Whipping Cream

Instructions

    Coarsely chop the chocolate and melt it over a hot water bath. Whisk together the egg yolks, whole egg, sugar, and rum over the same water bath until creamy. Stir in the melted chocolate and beat until cold. Then fold in the stiffly whipped cream. Pour into a shallow dish and freeze for at least 3 hours.

    Remove about 10 minutes before serving, stir gently to loosen, and serve distributed among glasses.
