Vanilla Ice Cream

Ingredients
- 400 l milk
- 200 l whipping cream
- 1 vanilla pod
- 6 egg yolks
- 150 g sugar

Slice the vanilla pod lengthwise, scrape out the seeds and stir them with the pod into the milk-cream mixture and bring to a boil.

Beat the egg yolks with the sugar in a bowl until creamy.

Pour the boiling milk into the egg yolk mixture, return everything to the pot, remove the vanilla pod and stir over low heat with a wooden spoon until the custard thickens; it must never boil again.

Strain the vanilla custard through a sieve, cool it over ice water while stirring occasionally.

Pour the chilled custard into an ice cream maker and churn until ready.

(Without an ice cream maker, pour into a shallow metal bowl and freeze in the freezer, stirring repeatedly during the first hour).

Serve by scooping with an ice cream scoop.
