Vanilla Cheesecake

Ingredients
- 200 g Flour
- 80 g powdered sugar
- 100 g butter
- 1 egg yolk
- 1 tsp grated untreated lemon zest
- 4 eggs
- 1 pinch salt
- 1 untreated lemon
- 750 g low-fat quark
- 150 g sugar
- 1 packet vanilla pudding powder
- plastic wrap
- flour (for handling)
- aluminum foil
Instructions

For the dough, place flour with powdered sugar and butter pieces on a work surface and crumble with a knife. Add egg yolk and lemon zest. Quickly knead all ingredients into a smooth dough.

Shape dough into a ball and wrap in plastic wrap; chill for about 1 hour in the refrigerator.

Roll dough slightly larger than the pan on a floured surface. Place in the pan, lifting up the edges. Prick the bottom several times with a fork. (Support the edge from inside with a strip of aluminum foil to prevent it from slipping during baking.)

Bake the crust on the lower rack in a preheated oven at 175°C for about 15 minutes. Meanwhile separate the eggs. Beat egg whites with salt until stiff peaks form. Wash lemon hot, dry, grate zest and squeeze juice.

Mix quark with lemon zest and juice, sugar, and pudding powder; gently fold in the meringue.

Spread the mixture over the pre-baked crust and bake for about 1 hour. Let stand in the pan for another ~10 minutes before removing.
