Ingredients
- 100 g almonds
- 200 g dried dates (pitted)
- 0.5 tsp vanilla powder
- 20 g shredded coconut (about 2 tbsp)
Instructions

Place almonds, dates and vanilla powder in a food processor or powerful blender and pulse into a sticky mixture.

Shape the mixture into equal-sized balls.

Spread coconut flakes on a flat plate. Roll the Vanilla Energy Balls in the coconut flakes and press lightly to coat.

Transfer the coated balls to an airtight container and store in the refrigerator.
