Nut Bread with Chocolate

Ingredients
- 700 g spelt flour
- 1 cube yeast
- 2 tsp sea salt
- 150 g natural sourdough starter (1 pack)
- 2 tbsp walnut oil
- 200 g walnuts (coarsely chopped)
- 200 g dark chocolate (coarsely chopped)
- flour (for the work surface)
Instructions

Dissolve the yeast in 2 tbsp lukewarm water and combine with about 420 ml lukewarm water, salt, sourdough starter and flour in a bowl to form a smooth dough. Cover and let rise in a warm place for about 1 hour.

Knead the dough and quickly fold in the walnuts, oil, and chocolate on a floured work surface. Transfer the dough to a greased and floured loaf pan, brush with water, cover with a damp cloth and let rise again for another 30 minutes.

Place a heat‑proof dish of water in an oven preheated to 180°C fan (convection) and bake the bread on the middle rack for about 60 minutes. Remove, allow to cool in the pan, then turn out onto a plate and serve with goat cream cheese.
