Coconut Papaya Bars
These coconut papaya bars deliver a fruity‑fresh flavor and an extra dose of summer vibe. The sweet, tropical taste is complemented by the creamy coconut base and a touch of turmeric for color and health benefits.
Ingredients
- 150 ml coconut milk
- 2 tbsp agave syrup
- 75 g coconut oil (5 Tbsp)
- 1 tsp turmeric powder
- 1 Papaya
- 300 g shredded coconut
- 400 g dark chocolate (at least 70% cocoa)
Instructions

Pour coconut milk, agave syrup, coconut oil and turmeric into a saucepan and gently heat for about 5 minutes, stirring occasionally. Remove from heat.

Peel, core and cut the papaya into pieces. Puree the fruit with an immersion blender until smooth.

Combine the papaya puree and shredded coconut with the coconut‑turmeric mixture. Spread evenly in a shallow baking dish lined with parchment paper and freeze for 2–3 hours.

Just before the end of freezing time melt the chocolate over a double boiler. Remove the frozen mixture, cut into 20 bars, dip each bar in melted chocolate and chill for at least 30 minutes before serving.
