Ingredients

  • 200 g strawberries
  • 30 g sugar
  • 1 tbsp butter
  • 1 tbsp powdered sugar
  • 60 g chopped hazelnuts
  • 300 ml milk
  • 1 tbsp Cornstarch
  • 2 tbsp vanilla sugar
  • 3 egg yolks
  • 100 ml whipping cream
  • mint (for garnish)

Instructions

    Wash, clean, and cut the strawberries into small pieces. Sprinkle 1 tbsp sugar over them and set aside. Warm the butter in a small saucepan, add powdered sugar, and lightly caramelize. Toss the hazelnuts in the caramel, remove from pan, spread on a plate, and let cool.

    Take 50 ml of milk aside. Bring the remaining milk to a boil with sugar and remove from heat. Whisk cornstarch and vanilla sugar into the reserved milk and egg yolks until smooth. Stir into the non‑boiling milk and gently heat (do not boil) while stirring until the mixture becomes creamy. Let cool, stirring occasionally. Whip the cream stiffly and fold it into the cooled custard.

    Add about 1 tbsp of hazelnuts to the glasses and spread half of the vanilla custard over them. Top with remaining hazelnuts and half of the strawberries, then cover with the rest of the custard. Distribute the remaining strawberries on the glasses and garnish with mint.
