Vanilla Flan

- 1 Vanilla bean
- 350 ml milk
- 3 eggs
- 60 g sugar
- 2 oranges
- 2 clementines
- 50 g honey
- 1 tsp orange blossom water

Preheat the oven to 180°C fan.

Split the vanilla bean and simmer with the milk for about 10 minutes on low heat. Remove from heat, discard the bean. Beat the eggs with the sugar until frothy. Pour the vanilla‑milk mixture into the egg batter while stirring, then strain through a fine sieve into four ramekins (about 150 ml each). Place the ramekins on a deep baking tray and pour hot water up to about one‑third of the cups. Bake for approximately 30 minutes.

Peel the citrus fruits thoroughly and cut out the segments. Squeeze the remaining pulp well and simmer the juice with honey and orange blossom water until slightly syrupy. Remove from heat, let cool slightly, mix in the fruit segments, then allow to chill completely.

Remove the flan from the oven and serve with the citrus fruits.
