Ingredients

  • 10 slices whole grain crackers
  • 300 g mixed fruit (e.g., strawberries, currants, blackberries, apricots)
  • 3 tbsp honey
  • 0.5 l milk
  • vanilla beans
  • 5 tsp corn starch
  • 2 egg yolks
  • 4 tbsp whipping cream

Instructions

    Heat the honey in a small saucepan for the vanilla sauce. Thoroughly mix the milk with the split vanilla bean and cornstarch, then pour over the honey. Whisk continuously until the sauce boils. Remove from heat. Beat the egg yolks with the cream and immediately stir into the hot sauce. Let the vanilla sauce cool while stirring occasionally.

    Break the crackers into pieces and line the bottom of a glass bowl with them. Wash and pat dry the fruit. Halve, pit, and slice the apricots. Arrange the fruit on the crackers and gently pour the vanilla sauce over it. Refrigerate for about 3 hours to set.
