Ingredients
- 1 Vanilla bean
- 400 ml milk
- 100 g sugar
- 7 fresh egg yolks
- 100 g dark chocolate
- 300 ml whipping cream
- 4 round chocolate biscuits
- 4 waffle rolls
Instructions
-
1.
Slice the vanilla bean lengthwise. Whisk the milk, sugar and egg yolks over a hot water bath until creamy. Remove from heat and stir cold (perhaps in ice water). Chop the chocolate into small pieces, reserving some larger chunks for decoration. Remove the vanilla bean from the mixture and fold in the stiffly whipped cream with the chocolate bits.

2.
Place the ice cream in the freezer for about 3 hours, stirring occasionally (or finish in an ice cream maker).
-
3.
For serving, scoop a large ball of ice cream onto each plate. Place a smaller one on top and press chocolate chunks into the ice cream to form a snowman face. On each biscuit place a small ball of ice cream and put the "hat" on the snowman. Garnish with an ice roll and serve.
