Vanilla Apple Gratin
The Vanilla Apple Gratin by Spoonsparrow is the perfect dessert for cold winter days!
Ingredients
- 5 tart apples (e.g., Boskop)
- 1 tbsp Lemon Juice
- 1 Organic Orange
- 1 Vanilla bean
- 120 g margarine (+ 1 tbsp for the pan)
- 1 pinch salt
- 75 g raw cane sugar
- 4 eggs
- 175 g spelt flour type 1050 (+ 1 tbsp for the pan)
- 0.5 tsp Baking powder

Peel, halve, and core the apples. Drizzle with lemon juice. Rinse the orange hot, pat dry, and grate 2 tbsp of zest. Split the vanilla bean lengthwise and scrape out the seeds.

Beat the margarine with a pinch of salt, sugar, vanilla seeds, and grated orange zest until fluffy. Gradually whisk in the eggs. Mix the flour with baking powder and fold into the batter.

Grease a 26 cm (10 inch) baking dish with margarine and dust with flour. Pour half the batter into the dish. Arrange the apple halves cut side up on top, then pour the remaining batter over them.

Bake in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for 45–50 minutes. Remove, let cool slightly, and enjoy the vanilla apple gratin warm.
