  • 30 g starch
  • 500 ml milk
  • 1 vanilla pod
  • 25 g sugar
  • 1 pinch salt
  • 40 g almond butter
  • 1 ripe Mango
  • Juice of 1 lime
  • Lemon balm (for garnish)

Instructions

    Whisk the starch with a little cold milk until smooth. Pour the remaining milk into a saucepan. Split the vanilla pod and scrape the seeds into the milk with a knife. Add the pod, sugar, and salt. Bring to a boil and stir in the prepared starch. Keep stirring while boiling and fold in the almond butter. Whisk the cream vigorously with a whisk and pour into glasses. Let cool.

    Cut thin strips from the mango for garnish. Peel the remaining mango and cut the flesh away from the fibrous core. Puree the mango flesh with lime juice and spoon over the cream. Garnish with mango strips and lemon balm before serving.
