Ingredients

  • 150 g butter
  • 150 g sugar
  • 4 eggs
  • 1 tsp lemon zest
  • 2 tsp Baking powder
  • 100 g Ground Almonds
  • 300 g flour
  • 100 ml milk
  • 250 g plums (canned)
  • 2 Bananas
  • 2 tbsp lemon juice
  • butter (for the pans)
  • ground almonds (for the pans)

Instructions

    Whisk the room‑temperature butter until fluffy. Alternately fold in sugar and eggs. Then add the lemon zest and mix with baking powder, ground almonds, flour, and milk gradually, stirring briskly to form a smooth, spreadable dough.

    Preheat the oven to 180 °C fan. Grease two loaf pans with butter and dust them with ground almonds.

    Divide the dough in half. Drain the plums well. Peel the bananas, mash roughly with a fork, and mix with lemon juice. Spoon one dough half into a pan, smooth the top. Pour the second dough half into the other pan and sprinkle with plums. Bake both for about 45 minutes until golden brown (test with a skewer). Remove from oven, cool, then release from the pans.
