Submerged Fruit Cake

Ingredients
- 20 g fresh yeast (1/2 cube)
- 100 g sugar
- 0.2 l lukewarm milk
- 400 g flour
- 1 pinch salt
- 1 egg
- 75 g melted butter
- 2 bananas (sliced)
- 150 g mirabelle plums (pitted and halved)
- 50 g raisins (soaked)
- 50 g dried cranberries

Dissolve the yeast and 1 tbsp sugar in the milk and let stand covered for 15 minutes. Mix half the flour, salt, egg, and 75 g sugar with the yeast milk and melted butter. Gradually knead in the remaining flour. Let the dough rise covered in a warm place for about 45 minutes until it doubles in volume.

Preheat the oven to 200°C fan.

Knead the dough again vigorously. Grease a not-too-large baking tray with butter and roll out the dough onto it. Press the soaked raisins, mirabelle halves, banana slices, and cranberries into the dough.

Place the cake in the preheated oven (center) and bake for about 30-35 minutes until golden brown (do the toothpick test!). Slice the finished cake warm or cold and serve.
