Ingredients

  • 800 g turnip sticks
  • 2 onions
  • 2 tbsp butter
  • 2 tsp vegetable broth (glass)
  • 4 tbsp medium-hot mustard
  • 150 g whipping cream
  • 1 tsp grated untreated lemon zest
  • 1 tsp lemon juice
  • 2 tbsp pumpkin seeds
  • 250 g Broccoli
  • 4 Carrots
  • 2 tbsp butter
  • Salt
  • Pepper

Instructions

    Brush turnips clean, peel hard parts thinly, cut turnips into 0.5 cm thick and 5 cm long sticks. Peel onions, finely dice, sauté in butter. Pour in turnips, vegetable broth, and 200 ml water; cover and simmer over medium heat for 20-30 minutes until tender.

    For the vegetables, peel and wash carrots. Trim broccoli, cut into florets, wash, and blanch both vegetables in boiling salted water for 6 minutes, then drain well. Dice carrots finely.
