Ingredients

  • 1 lemon (juice)
  • 800 g black salsify
  • Salt
  • 1 tsp sugar
  • 2 Tomatoes
  • 200 ml heavy cream
  • 100 ml Vegetable broth
  • 0.5 tsp horseradish (jarred)
  • 1 tbsp chives sprigs
  • coriander (for garnish)

Instructions

    Pour the lemon juice with about 400 ml water into a bowl. Peel the black salsify and cut into pieces about 8 cm long. Immediately place each piece in the lemon water. Then cook in boiling salted water with sugar for about 10 minutes.

    While the salsify cooks, wash the tomatoes, quarter them, remove seeds, and dice finely. Let the cream simmer with the broth slightly, then stir in the horseradish, chives, tomatoes, and drained black salsify. Season with salt and serve on plates or bowls, garnished with coriander.
