Turnip Puree

Turnip puree with curry and lime: The puree is gentle on the stomach, vitamin-rich, low in cholesterol and fat. Delicious as a vegetarian side dish.
Ingredients
- 400 g turnip (1 piece)
- Salt
- 1 Organic Lime
- 1 Garlic clove
- 2 tsp mild curry powder
- 100 ml milk (1.5% fat)
- black pepper
Instructions

Clean the turnip, cut into thick slices and peel. Dice the flesh, put it in a pot and fill about half with lightly salted water. Bring to a boil and simmer covered over medium heat for 20 minutes.

Meanwhile rinse the lime hot, dry it and finely grate about half of its zest.

Peel the garlic and finely chop it.

Add the garlic, curry powder and milk to a pot, season with salt and pepper, and bring to a boil.

Drain the turnip cubes, let them steam off briefly, then mash them.

Gradually stir in the hot milk.

Fold in the lime zest and, if desired, a splash of lime juice, then serve immediately.
