Ingredients
- 2 scallions
- 400 g ground beef
- 1 tbsp finely chopped mint
- 1 egg yolk
- 1 tsp grated lemon zest
- 2 tbsp freshly grated white bread
- 1 tsp Pul Biber (dried paprika flakes, mild or hot; Turkish grocery store)
- Salt
- pepper (ground)
- 3 tbsp olive oil
- 4 skewer sticks
Instructions

Peel and finely chop the scallions.

Mix ground beef, scallions, mint, egg yolk, lemon zest, grated white bread, Pul Biber, salt, and pepper into a meat dough.

Form about 20 small balls, thread onto skewers, flatten slightly, and fry in hot oil for 2-3 minutes per side (or grill and brush with oil).

Serve with flatbread if desired.
