Ingredients

  • 2 scallions
  • 400 g ground beef
  • 1 tbsp finely chopped mint
  • 1 egg yolk
  • 1 tsp grated lemon zest
  • 2 tbsp freshly grated white bread
  • 1 tsp Pul Biber (dried paprika flakes, mild or hot; Turkish grocery store)
  • Salt
  • pepper (ground)
  • 3 tbsp olive oil
  • 4 skewer sticks

Instructions

    Peel and finely chop the scallions.

    Mix ground beef, scallions, mint, egg yolk, lemon zest, grated white bread, Pul Biber, salt, and pepper into a meat dough.

    Form about 20 small balls, thread onto skewers, flatten slightly, and fry in hot oil for 2-3 minutes per side (or grill and brush with oil).

    Serve with flatbread if desired.
