Ingredients
- 750 g lean ground beef
- 100 g fresh mushrooms (finely chopped)
- 1 onion (finely chopped)
- 2 tbsp parsley (finely chopped)
- 1 pickled cucumber (finely chopped)
- 1 egg
- 50 ml whipping cream
- 125 g alpine cheese (finely chopped)
- 2 rolls (soaked in water)
- Pepper (freshly ground)
- 1 Garlic clove
- 200 g breakfast bacon (finely chopped)

Preheat the oven to 190°C. Fry the bacon until crisp in a pan and drain on paper towels. In the bacon fat, sauté mushrooms and onions until translucent and let cool slightly. In a bowl, knead the ground beef with egg, cream, bacon, cheese, parsley, pickled cucumber, and the drained, crumbled rolls. Season with salt, pepper, and optionally a pressed garlic clove.

Fill the mixture into a greased loaf pan and bake for 70 minutes. Transfer the finished meatloaf to a wooden board and slice. Serve as desired with a root vegetable salad or a green salad. Fresh white bread pairs well.
