Turkey Strips with Coconut Curry

Ingredients

  • 600 g turkey breast fillet
  • 2 red bell peppers
  • 4 Spring Onions
  • 1 Garlic clove
  • 1 tsp freshly grated ginger
  • 1 chili pepper
  • 4 cm lemongrass
  • 2 tbsp oil
  • 1 tbsp red curry paste
  • 200 ml coconut milk
  • 200 ml poultry broth
  • soy sauce
  • Cayenne pepper

Instructions

    Wash and pat dry the turkey breast, then cut into strips.

    Wash, halve, deseed, and slice the bell peppers into strips.

  3. 3.

    Wash, trim, and cut the spring onions diagonally into about 4 cm pieces.

    Peel and finely chop the garlic.

    Wash, halve lengthwise, deseed, and finely chop the chili pepper.

    Sauté garlic, chili, lemongrass, and chili in hot oil briefly. Add curry paste and mix with turkey. Sauté together and deglaze with coconut milk. Let it simmer slightly before adding broth. Add bell peppers and spring onions. Simmer for about 2 minutes.

    Tear basil leaves and chop all but a few for garnish. Mix into the stew, season with soy sauce and cayenne pepper. Serve garnished with basil leaves. Pair with rice if desired.
