Chili Turkey Breast with Apple and Spinach

Ingredients

  • 500 g Turkey breast fillet
  • 2 tbsp ketchup
  • 2 tbsp Light soy sauce
  • 1 red chili pepper
  • 1 tsp Sweet paprika powder
  • 2 apples (tart)
  • 1 tbsp Lemon Juice
  • 250 g fresh spinach
  • Salt
  • ground black pepper
  • 2 tbsp clarified butter
  • 150 ml apple juice
  • 150 ml broth

Instructions

    Slice the turkey into strips. Wash, deseed and remove the white membranes from the chili pepper, slice it into thin rings, combine with the remaining ingredients for the marinate and add to the meat; mix well and let marinate for at least 30 minutes.

    Wash the apples (peel if desired), halve them, core and cut into wedges, drizzle with lemon juice. Wash, trim and rinse the spinach, then drain it thoroughly.

    Remove the meat from the marinade and sear in a pan over medium heat with 1 tbsp hot clarified butter for about 3–4 minutes on each side. Remove and wrap in foil; keep warm at 80 °C in the oven.

    Sauté the apples in the remaining clarified butter for about 2 minutes. Deglaze with apple juice and broth, bring to a boil briefly, add the spinach and let it wilt slightly. Season with salt and pepper. Return the turkey strips to the pan with the juices from the foil, stir briefly, and serve on preheated plates.
