Ingredients

  • 400 g pork tenderloin fillet
  • 300 g fresh bean sprouts
  • 2 red bell peppers
  • 1 leek stalk
  • 1 white onion
  • 4 tbsp Vegetable oil
  • 2 tbsp Light soy sauce
  • 1 tsp ground ginger
  • 3 tsp cornstarch
  • black pepper (freshly ground)

Instructions

    Wash the peppers, halve them, remove seeds, quarter and slice into strips. Wash and trim the leek, cut into rings. Rinse bean sprouts and drain. Peel and finely chop the onion. Slice pork tenderloin into strips, salt and pepper it.

    Heat 2 tbsp oil in a wok (or a pan if no wok is available). Quickly sear the meat, then remove and set aside. Add the remaining oil and sauté onion and bell peppers for about 3 minutes.

    Add leek and sprouts and cook for another 2 minutes. Dissolve cornstarch in a little water and pour over the vegetables. Return the meat, add ginger and soy sauce, stir and simmer for about 3 more minutes. Season with pepper and serve hot.
