Turkey Schnitzel with Spinach-Ham Filling

Ingredients
- 200 g frozen spinach
- 1 Shallot
- 1 Garlic clove
- 4 tbsp olive oil
- Salt
- Pepper
- nutmeg
- 600 g thin turkey schnitzels (4 thin)
- 40 g Parma ham (4 slices)
- 20 g Parmesan (1 piece)

Instructions

Let the spinach thaw. Peel and finely dice the shallot and garlic.

Heat 2 tbsp oil in a pan. Sauté the shallot and garlic over medium heat until translucent. Lightly squeeze out excess water from the spinach, mix it in, and cook everything together for 5 minutes. Season with salt, pepper, and freshly grated nutmeg, then let cool slightly.

Meanwhile rinse the schnitzels under cold water and pat dry. Pat them flat, season with pepper, and top each with a slice of ham.

Spread the spinach over the schnitzels and sprinkle Parmesan on top. Fold the schnitzel in half and secure with toothpicks.

Heat the remaining oil in a pan. Brown the schnitzels on both sides over high heat for 5–6 minutes until crisp and golden brown. Season to taste with salt.
