Ingredients
- 1 chicken (pre‑cooked, about 1.5 kg)
- 4 garlic cloves (chopped)
- Sea salt
- 50 g soft butter
- 1 red pepper (finely chopped without seeds)
- 1 tbsp Olive Oil
- 50 ml lemon juice
- 200 ml orange juice
- 100 ml olive oil
- 20 ml lemon liqueur
- 1 tbsp parsley (chopped)
- 1 untreated organic orange (zest included)
- 50 g black olives
- 1 tbsp Olive Oil

Cut the chicken into 12 pieces. Mix garlic with about 1 tsp salt, butter and pepper in a bowl. Rub the poultry pieces with this mixture and marinate for about 30 minutes. Then briefly sear them in 1 tbsp hot oil. Roast in a preheated oven at 180°C (convection) for about 40–45 minutes, basting occasionally with the pan juices. Add a little water if needed.

Combine the remaining ingredients for the sauce in a bowl and place the browned chicken pieces into it, turning them to coat and letting them absorb some flavor. Taste before serving and serve with crispy white bread as desired.
