Grilled Chicken with Zucchini

Savour the fresh flavours of grilled chicken and zucchini in this simple yet delicious recipe from Spoonsparrow.

Ingredients

  • 4 chicken breast fillets
  • 1 tsp Paprika powder (hot)
  • 1 tbsp finely chopped sage leaves
  • oil
  • Salt
  • ground pepper
  • 1 Zucchini
  • strong aluminium foil
  • 200 ml ketchup
  • 50 ml Vegetable broth
  • Tabasco sauce
  • white onion ring
  • sage leaf
  • paprika cubes

Instructions

    Season the chicken breasts with paprika, sage, salt and pepper, then brush them with oil.

    Wash, trim and slice the zucchini into about 0.5 cm thick rounds.

    Brush a piece of strong aluminium foil with oil on one side, place it on the grill that is not too hot, and grill the chicken pieces for about 10–12 minutes total. Grill each zucchini slice for about 3–4 minutes per side, brushing with oil and seasoning with salt and pepper.

    For the grill sauce, mix ketchup with broth and add a few dashes of Tabasco, then place the onion rings in a bowl.

    Arrange the grilled chicken breasts with zucchini slices on a platter, garnish with sage leaves and paprika cubes, and serve with the grill sauce.
