Turkey Roast

- 1 Garlic clove
- 2 tbsp Maple syrup
- Salt
- freshly ground pepper
- 1 turkey breast fillet (roast) about 1.2 kg
- 3 onions
- 2 tbsp clarified butter
- 400 ml vegetable stock
- 500 g broccoli
- 1 small cauliflower
- 4 Carrots
- 2 tbsp butter
- 750 g frozen croquettes

Peel and finely chop the garlic. Mix with maple syrup, salt, and pepper. Rinse the turkey breast, pat dry, and rub with the seasoning mixture. Peel and finely slice the onions. Heat clarified butter in a roasting pan, sear the turkey all over over medium heat. Add the onions. Season again with salt and pepper. Pour in vegetable stock, cover, and simmer on low heat for about 40 minutes.

Divide broccoli into florets, peel thick stems. Clean cauliflower and cut into florets. Peel carrots and slice into rounds. Steam vegetables separately in a little water with salt and pepper for 8-12 minutes, drain, let dry, then mix. Melt butter over the mixture.

Prepare croquettes according to package instructions. Remove turkey from pan, slice, and arrange on plates with vegetables and croquettes.
