Turkey Meatball Tomato Pan

Ingredients

  • 600 g turkey mince
  • 2 egg yolks
  • 80 g breadcrumbs
  • Salt
  • Pepper (freshly ground)
  • 1 red pepper
  • 5 spring onions
  • 500 g cherry tomatoes (red and yellow)','40 g butter','3 tbsp olive oil

Instructions

    Mix the turkey mince with the two egg yolks and 4 tbsp breadcrumbs. Season with salt and pepper. With damp hands form small balls and chill until further use.

    Wash, trim, deseed the red pepper and slice into thin rings. Wash and trim the spring onions and cut diagonally into rolls. Wash the cherry tomatoes and halve them.

    Coat the meatballs in the remaining breadcrumbs. Heat butter in a pan and brown the meatballs on all sides over medium heat for 8–10 minutes until golden brown. Remove from pan and drain on kitchen paper.

    Heat olive oil in a pan, sauté spring onions, red pepper and cherry tomatoes for 5–7 minutes while stirring. Season with salt and pepper. Add the meatballs and toss briefly in the pan. Taste and serve.
