Kibbeh

Ingredients
- 250 g bulgur
- 1 Shallot
- 500 g ground lamb
- Salt
- black pepper (freshly ground)
- 1 finely chopped shallot
- 250 g ground beef
- 2 tbsp oil
- 0.5 tsp cumin
- 0.5 tsp cinnamon
- 50 g Pine nuts
- lime slice (for garnish)
Instructions

Soak bulgur in cold salted water for about 10 minutes. Drain, rinse, and gently squeeze out excess water.

Peel the shallot and dice it very finely. Mix with ground lamb and bulgur, season with salt and pepper, cover and refrigerate for 1 hour.

For the filling, sauté the shallot in hot oil, add ground beef and brown. Add pine nuts, cumin, cinnamon, salt, and pepper to taste. Remove from heat.

Take a walnut-sized piece of the chilled dough, press a small hole into it, fill with about 1 tsp of the mixture, seal around the filling, and roll into small croquettes. Refrigerate for 30 minutes, then fry in hot fat for about 8–10 minutes until golden. Drain on paper towels and serve.
