Rapunzel with Chicken Croquettes

- 1 old-fashioned roll
- 500 g turkey mince
- 1 egg
- 1 tbsp sharp mustard
- Salt
- Pepper (freshly ground)
- 1 red bell pepper
- 100 g flour
- 1 egg
- 150 g breadcrumbs
- 60 g clarified butter
- 150 g lamb's lettuce
- 1 baby zucchini
- 1 onion
- 150 g bacon cubes

Soak the roll in lukewarm water, then squeeze out excess liquid. Mix the mince with the egg, mustard and rolled bread, season with salt and pepper. Wash, core and peel the bell pepper, cut into thin strips about 3 cm long. Shape the meat dough into croquettes, flatten them, press a pepper strip into the center and wrap it in more meat.

Coat the formed meat croquettes first in flour, then in beaten egg, and finally in breadcrumbs. Press the coating firmly on. Fry them in hot clarified butter until golden brown all around. Remove and drain on kitchen paper. Rinse the lamb's lettuce, wash well and dry thoroughly.

Wash, core and slice the baby zucchini into rounds. Peel and halve the onion, then dice finely. In a pan cook the bacon until crisp, add the onion and zucchini slices and sauté briefly. Season with pepper. Arrange the bacon‑vegetable mix and croquettes on plates, place the lamb's lettuce in the center, and serve immediately.
