Turkey Fillet with Bell Peppers

Ingredients
- 6 bell pepper halves
- 1 Garlic clove
- 600 g turkey breast fillet
- 10 g ginger (1 piece)
- 3 thyme sprigs
- 3 tbsp olive oil
- Salt
- black pepper
- 100 ml Vegetable broth

Wash, halve, and trim the bell peppers; slice into strips. Peel and finely chop the garlic. Rinse the turkey breast under cold water, pat dry, and cut into strips. Peel and grate the ginger. Wash the thyme, shake off excess moisture, and chop the leaves.

Heat 2 tbsp of oil in a large non-stick pan over medium heat. Sauté the turkey with garlic and ginger until golden brown on all sides. Remove from the pan and set aside.

Heat the remaining oil in the pan. Sauté the bell pepper strips over medium heat for 2–3 minutes. Add thyme, season with salt and pepper, and deglaze with vegetable broth. Stir occasionally and cook for about 5 minutes until the liquid has almost completely evaporated.

Return the turkey mixture to the pan and let it simmer for another 2–3 minutes. Serve in four shallow bowls.
