Tuna Vegetable Sandwich

Ingredients

  • 1 red bell pepper
  • 2 Tomatoes
  • 2 Spring Onions
  • 1 stalk Celery
  • 50 g black olives (pitted)
  • 1 tbsp capers
  • 2 anchovies
  • 120 g tuna in oil
  • 2 tbsp freshly chopped basil
  • Salt
  • 1 tsp lemon juice
  • pepper (ground)
  • 1 baguette

Instructions

    Wash the bell pepper, halve it, clean and cut into strips. Wash the tomatoes, quarter them, remove seeds and cut into strips as well. Wash the spring onions, trim and slice into rings. Wash the celery, trim and slice finely. Drain and chop the olives. Pat dry the capers and anchovies. Combine all prepared ingredients with the tuna (including oil) in a bowl and mix well with basil. Season with salt, lemon juice and pepper.

    Cut the baguette lengthwise and hollow out the crumb (leaving about 2 cm border). Fill with the salad, wrap and refrigerate until serving. Unwrap and cut into pieces before serving.
