Ingredients

  • 4 leek leaves (preferably light green)
  • 150 g ready-made sushi rice
  • vinegar water (for shaping)
  • 200 g fresh tuna fillet
  • 1 tsp wasabi
  • 0.25 roasted nori sheet
  • wasabi (for garnish)

Instructions

  1. 1.

Wash the leek leaves and cut them lengthwise in half to create 8 strips. Blanch the leek strips in boiling water for about 30 seconds, drain, shock in cold water, and lay them out on a clean kitchen towel to dry.

  2. 2.

Divide the sushi rice into 8 portions and shape each portion into small nocks (or elongated balls) with hands dampened in vinegar water. Cut the nori sheet into 8 rectangular pieces and attach one piece to each rice nock. Slice the tuna fillet into 8 thin slices. Place a leek strip on the work surface, lay a tuna slice roughly across its middle, add a small amount of wasabi, and place the rice nock with the nori side up on top. Bring the ends of the leek strip upward and carefully tie them together. Arrange two tuna sushi pieces with a dab of wasabi paste on a plate.
