Tuna Skewers

Ingredients

  • 300 g tuna (about 1.5 cm thick slices)
  • 1 tbsp Lemon Juice
  • 1 tbsp soy sauce
  • 1 tbsp sherry
  • 0.5 tsp Sugar
  • 4 mushrooms
  • 2 Spring Onions
  • paprika peppers (half red and half green each)
  • 1 piece ginger (walnut-sized)
  • 2 tbsp sunflower oil
  • Salt
  • Pepper (freshly ground)
  • 4 wooden skewers

Instructions

    Wash the tuna, pat dry and cut into bite‑size cubes. In a shallow bowl whisk together lemon juice, soy sauce, sherry and sugar. Toss the fish cubes in the mixture and marinate for about 1 hour in the refrigerator. Clean the mushrooms. Wash and trim the spring onions, cutting the white and light green parts into thirds. Clean the peppers, wash, halve, seed, remove the white membranes and cut into diamond shapes. Peel the ginger and slice very thinly. Remove the tuna from the marinate and pat dry.

    Skewer each stick alternately with fish, pepper diamonds, ginger slices and spring onion pieces. Brush the tuna skewers lightly with oil and season with salt and pepper. Grill over medium heat for about 6 minutes, turning occasionally.
