Ingredients

  • 4 tuna steaks
  • Juice of 1 lime
  • Salt
  • Pepper
  • 2 tbsp plant oil
  • 4 tomatoes
  • 1 fresh mango
  • 2 Spring Onions
  • 400 g sweet potatoes
  • 2 tbsp olive oil

Instructions

    Peel, wash the potatoes, cook in salted water for about 20 minutes, drain and let dry well, slice into rounds.

    Wash the fish, pat dry, marinate with lime juice, salt, and pepper for 10 minutes. Cut the mango in half, remove seed, scoop out flesh, dice. Wash tomatoes, quarter, remove seeds, finely dice flesh. Clean spring onions, wash, cut into rings.

    Heat 2 tbsp olive oil and fry sweet potato rounds, turning occasionally, for 5 minutes, season with salt.

    Heat plant oil, pat fish dry and sear each side in hot oil for about 3 minutes (to taste), season with freshly ground pepper. Arrange potato rounds on plates, place tuna steak on top, garnish with mango and tomato cubes, sprinkle spring onion rings.
