Ingredients
- 125 g low-fat quark
- 3 tbsp olive oil
- 1 egg
- 250 g flour
- 1 tsp salt
- 2 cans tuna
- 5 garlic cloves
- 1 tbsp oregano
- 125 g green pitted olives
- 200 g sheep cheese
- 125 small black olives
- 1 onion
- 2 tbsp olive oil
- 4 Garlic cloves
- 4 tbsp tomato paste
- 1 can tomatoes
- 2 tsp oregano
- 2 tsp thyme
- 2 tsp basil
- Salt
- pepper (from grinder)
- 1 bay leaf

Peel and finely chop the onion, sauté in oil. Peel and press the garlic. Stir in tomato paste, tomatoes, herbs and spices; simmer for 30 minutes.

Mix quark, salt, oil and egg; combine with flour; cover and rest for 15 minutes. Drain tuna, break into flakes. Peel and press garlic, season with salt, pepper and oregano. Slice olives, crumble cheese. Roll dough on a floured surface into an oval, place on greased baking sheet and form a thick edge. Spread sauce over dough, top with tuna mixture, scatter olives, drizzle with tuna oil. Bake in oven at 180°C (fan) for about 25 minutes until crisp.
