- 250 g flour
- 20 g yeast
- 0.125 l lukewarm water
- 4 tbsp olive oil
- Salt
- 400 g Tomatoes
- 2 tbsp olive oil
- 1 tsp dried thyme
- 150 g mozzarella
- 50 g salami

Sift the flour into a bowl and make a well in the center. Crumble the yeast into some water, pour it into the well, sprinkle with flour and let rise covered for 15 minutes. Add the remaining water with salt and oil and knead into a smooth dough. Cover and let rise in a warm place for 1 hour.

Parboil the tomatoes, shock them in cold water, peel off the skins, dice finely and simmer with 1 tbsp olive oil in a pot until reduced. Season with thyme, salt and pepper. Slice the mozzarella and thinly slice the salami.
