Ingredients
- 400 g tuna fillet
- 2 small eggs
- 1 tbsp breadcrumbs
- 1 Garlic clove
- 1 Spring onion
- 1 stalk lemongrass
- Salt
- Pepper
- Cayenne pepper
- peanut oil (for frying and deep-frying)
- 2 tbsp spring onion rings

Clean the spring onions and finely chop them. Peel the garlic and finely chop it as well. Clean the lemongrass and finely chop it. Sauté the spring onions and garlic in 1 tsp peanut oil and let cool. Feed the tuna fillet through a meat grinder. Mix with eggs, breadcrumbs, spring onions, garlic, and lemongrass, and season with salt, pepper, and cayenne pepper.

Heat the peanut oil. Shape the fish mixture into 12 small patties and fry them in batches, letting them float in the hot fat until golden brown. Briefly fry the spring onion rings as well and scatter them over the patties as garnish.
