Ingredients
- 4 pike-perch fillets (about 120 g each)
- 2 tbsp lemon juice
- Salt
- Pepper
- 4 tbsp flour
- 2 onions
- 120 g bacon cubes
- 150 ml dry white wine
- 100 ml whipping cream
- parsley (for garnish)
Instructions

Rinse the fish fillets and pat them dry. Drizzle with lemon juice, season with salt and pepper, then coat in flour. Peel and finely dice the onions.

Sauté the bacon in a pan until crisp, then add the onions and cook until translucent. Remove both from the pan and brown the pike-perch fillets on each side for about 1 minute. Set the fish aside to keep warm.

Return the bacon and onions to the pan, pour in white wine and cream, and simmer uncovered for about 5 minutes over medium heat until thickened. Place the fish back into the sauce, let it warm briefly, then serve garnished with parsley.
