Tuna in Spring Roll Wrapper with Sesame

Ingredients
- 16 sheets frozen spring roll wrappers
- 500 g tuna
- Salt
- black pepper (freshly ground)
- 2 tbsp white sesame seeds
- 1 tbsp black sesame seeds
- 5 scallions
- 1 bunch coriander (about 30 g)
- 1 tbsp Lemon Juice
- 2 tbsp melted butter
- oil for frying
- 100 g sprout mix

Soak the spring roll wrapper sheets in cold water. Remove and lay them side by side on a kitchen towel.

Wash the tuna, pat dry, and cut into 2 cm wide by 5 cm long pieces. Season with salt and pepper.

Mix the sesame seeds together. Wash and shake dry the scallions and coriander, then finely chop. Combine with lemon juice. Press each tuna piece so one side touches the sesame mixture and the other side presses into the scallion‑coriander mix.

Place two wrapper sheets on top of each other, brush lightly with butter, lay a tuna piece on each, fold in the sides and roll tightly. Fry in hot oil for 2–4 minutes until golden yellow. Remove, drain on a kitchen towel, and serve with a small sprout salad.
