Tuna Wrapped in Dough with Dip

Fresh tuna fillets coated in a crispy dough shell served with a zesty lime-soy dip.
Ingredients
- 500 g tuna fillet (ready to cook, skinless)
- Salt
- Pepper (freshly ground)
- 1 tbsp wasabi paste (Asian market)
- 1 egg yolk
- 3 tbsp freshly chopped coriander leaves
- 3 tbsp freshly chopped parsley
- 8 spring roll wrappers (Asian store)
- vegetable oil (for frying)
- 2 tbsp Lime juice
- 80 ml light soy sauce
Instructions

Wash the tuna fillet, pat dry with paper towels, cut into 8 equal sticks (about 8 x 2.5 x 2 cm), season with salt and pepper.

Whisk the wasabi paste with 1 tbsp water until smooth.

Beat the egg yolk with 1 tbsp water.

Spread the wasabi mixture on each tuna stick, then coat with the herbs. Place one tuna strip on a spring roll wrapper, brush the edges with the beaten egg yolk, and roll up tightly.
