Tuna Tartare

Ingredients
- 250 g tuna
- 1 Avocado
- 4 tbsp olive oil
- 4 tbsp Lemon juice
- 1 tbsp corn germ oil
- Salt
- ground pepper
- white pepper
- frisée lettuce
- Arugula leaf (for garnish)
- 4 cornichons
Instructions

Cut the tuna into fine cubes, mix with 2-3 tbsp lemon juice, oil, salt and pepper, cover and refrigerate.

Wash frisée lettuce, dry and arrange on a plate. Halve the avocado, remove pit, peel and cut into 1 cm cubes. Mix immediately with 2 tbsp lemon juice, season with salt and lightly sprinkle white pepper. Using a metal ring place each quarter of avocado cubes on plates in a circular base shape. Top with tuna tartare, add cornichons and garnish with an arugula leaf.
