Ingredients
- 4 Spring Onions
- 1 small knoll celery
- 400 g fresh tuna
- 1 Shallot
- 1 tbsp freshly chopped mint
- 1 tsp light roasted sesame seeds
- 1 tbsp grape seed oil
- Salt
- pepper (ground)
- 3 tbsp olive oil
- 1.5 tbsp white wine vinegar
- lemon slice (for garnish)
- chives (for garnish)
Instructions

Wash, trim and slice the spring onions into thin rings. Peel, wash the celery, cut into thin slices then into 1x5 cm long strips. Wash the tuna, pat dry and dice into small cubes. Peel and finely chop the shallot, mix with the tuna cubes, mint, sesame seeds and oil, seasoning with salt and pepper.

Heat olive oil in a pan and sauté the celery strips with the spring onions. Deglaze with vinegar, season with salt and pepper, then set aside. Arrange the celery mixture on a plate, top with the tuna tartare, garnish with half a lemon slice and chives sprigs, and serve.
