Tuna in Sesame Batter Wrap

Ingredients
- 16 sheets spring roll wrappers (frozen) (each 16 cm diameter)
- 4 green onions
- 1 stalk lemongrass
- 2 cm fresh ginger
- 0.5 bunch cilantro
- 1 tbsp dark sesame seeds
- 2 tbsp light sesame seeds
- 600 g fresh tuna
- Salt
- ground pepper
- 4 tbsp sesame oil

Soak the wrapper sheets in cold water and place between two damp kitchen towels.

Wash, trim, and slice the green onions into thin rings. Clean and finely chop the lemongrass. Peel and finely mince the ginger. Rinse the cilantro, shake dry, and cut the leaves into fine strips. Mix with the green onions, ginger, and lemongrass. Combine the sesame seeds.

Place two wrapper sheets on top of each other and spread the herb mixture over them. Place a piece of tuna on top with the sesame side facing up, fold the wrapper closed tightly, seal well, and fry in hot oil until golden brown. Remove and serve on a plate with sprout salad if desired.
